Christmas Leftover Recipes

Homemade Turkey Soup (Serves 3 - 4 pax)

Ingredients:

  • 2 TBSP Olive Oil
  • 2 Garlic Cloves Peeled and Smashed
  • 1 Bay Leaf
  • 1 Tsp Dried Thyme or 2 Springs of Fresh Thyme
  • 2 Sticks of Celery Peeled and Chopped
  • 5 Medium Potatoes Peeled and Cut into Chunks
  • 2 Medium Carrots Peeled and Cut into Chunks
  • 1 Box or Liter of Low Sodium Chicken Broth or Homemade Turkey Stock from the Carcass
  • 1kg Leftover Turkey Meat Cut into Chunks or Shredded
  • Sea/Kosher Salt
  • Ground Black Pepper
  • Chopped Flat-Leafed Parsley for Garnish

Method:

In a high, heavy bottomed pan, heat the oil over medium heat. Add smashed cloves of garlic, sliced onions, chopped celery, thyme, and the bay leaf to sweat until translucent and until everything smells fragrant. Add in peeled and roughly chopped carrot and potato chunks. Pour in stock and bring to the boil then reduce to a simmer for 30 mins or until the carrots and potatoes are tender. Add in leftover turkey meat then season with salt and pepper to taste. Ladle into bowls and garnish with chopped parsley. Best served with Delifrance’s crusty baguette or soft rolls.

Turkey Casserole (Serves 5 - 6 pax)

Ingredients:

  • Torn up Delifrance Baguette or Ciabatta
  • 2 TBSP Melted Garlic Butter
  • 2TBSP Olive Oil
  • 1 Small Yellow Onion Chopped
  • 200g of Chopped Cremini Mushrooms or any Leftover Veggies
  • 1 Can of Chicken Soup
  • 800g-1kg Leftover Turkey Meat Chopped
  • Sea/Kosher Salt
  • Ground Black Pepper
  • Chopped Parsley for Garnish
  • Leftover Gravy

Method:

Preheat your oven to 200 degrees Celsius. Toss leftover bread pieces in melted garlic butter and set aside. Heat a medium pan and add olive oil. Add in onion, mushrooms, and any leftover veggies to sauté over medium high heat until translucent and fragrant. Season with salt and pepper to taste and keep stirring until softened for about 6 minutes. Add in one full can of chicken soup and thin with half a can of water. Add in leftover turkey meat then bring the mixture to a boil and reduce to a simmer until thickened and everything is well coated. Transfer the mixture into an oiled 9”x13” baking dish and top with garlic bread pieces. Bake in a 180 Celsius degree oven for about 20mins or until evenly golden on top and bubbling. Top with freshly chopped parsley and serve with any leftover gravy.
